Honey Garlic Salmon and Vegetable Sheet Pan Dinner

Salmon Ingredients:
1.5lb salmon fillet
3 tbsp minced garlic
1.5 tbsp honey
1 tbsp soy sauce
1 tbsp vinegar
1 tbsp vegetable oil
1 tsp brown sugar
½ tsp black pepper
Green onions as garnish
Vegetable Ingredients:
1 Sliced Zucchini
1 Sliced Red pepper
¼ Sliced Purple onion
1 tbsp minced garlic
1 tbsp vegetable oil
½ tsp black pepper
Salt to taste
Instructions:
1. Preheat oven to 425 degrees F
2. Marinate salmon fillet in mixture of garlic, black pepper, brown sugar, soy sauce, vegetable oil, and vinegar for 30min or overnight.
3. Mix vegetable oil, garlic, black pepper, and salt in a bowl. Cover sliced vegetables with garlic sauce.
4. Place salmon and vegetables on sheet pan.
5. Bake in oven at 425 degrees F for 20min
6. After salmon and vegetable cooking is complete, drizzle honey over the salmon.
