Spicy Pork Bone Soup (Gamjatang)

If you love gamjatang, but need to watch your salt, this recipe lets you adjust salt to your pleasure.
6 servings Prep time: 15 min Cook time: 30min
Ingredients:
2 lbs Pork ribs/ bones
1 lb Napa cabbage
2 Potatoes cut into medium cubes
1 Onion cut into medium cubes
½ cup Diced Green Onions
6 tbsp Minced garlic
6 tbsp Ground roasted perilla seeds
3 tbsp Red Korean pepper powder
2 tbsp Korean fermented soybean paste (Doenjang)
1 ½ tbsp Sugar
4 Bay leaves
2 tsp Black pepper
8 cups water for soup
Salt to taste
Instructions
1. Add pork bones to pot of boiling water for 5 minutes, then pour out hot water and rinse pork bones in cold water.
2. Add pork bones, potatoes, onions, bay leaves, fermented soybean paste, and 8 cups of water to pot on oven at high heat
3. In another pot, add napa cabbage to pot of boiling water for 1-2 minutes, then rinse in cold water and tear into small pieces.
4. When pot with pork bones comes to a boil, add napa cabbage, garlic, perilla seeds, Korean pepper powder, black pepper, and sugar. Set to medium heat for 30 minutes.
5. Once potatoes are soft, add green onions and salt to taste.
