Seaweed Cucumber Salad

Fresh salads for springtime.
3-4 servings Prep time: 25 min
Ingredients:
1/2 oz dried or 1-1.5 cup rehydrated seaweed
½ thinly sliced cucumber
2 tbsp rice vinegar
1 tbsp pureed or minced garlic
1 tsp sugar
1 tsp sesame oil
½ tsp pureed or minced ginger
½ tsp soy sauce
Instructions:
1. Soak the dried seaweed in cold water for 15-20min.
2. Drain and squeeze the water from the seaweed.
3. Slice the seaweed into small 1 inch length pieces.
4. Mix the seaweed, cucumber, rice vinegar, garlic, sugar, sesame oil, ginger, and soy sauce together in a large bowl.
